I've done a lot of bluegrass where a single mic has been used. I have used a few mics but some that have worked best for me are the Shure sm27 and Ear Trumpet AKG 414 is pretty much the best mic for bluegrass IMO. One bluegrass moonshine bar I work at keeps one in the booth and it's fantastic.
